The holidays are not complete for me without gingerbread cookies – my first year of AIP I managed to make it through without them, however I definitely broke down and added a good splash of brandy to me dairy-free eggless nog… So this year I was determined to make an AIP-friendly version of my favourite holiday treat – the Gingerbread Man.
It was very important to me to achieve the taste and consistency of the gingerbread recipe I grew up making every Christmas season. We tweaked that recipe a fair bit back then too; my brother is diabetic so we tried “sugar-less” versions, we tried different flours, used egg-replacers, tried various icings, and we definitely increased ALL the spices!
This is a pretty large recipe, so keep that in mind when looking at the sugar content. Try your own adjustments – this recipe is pretty resilient to change!
Gingerbread Cookies (makes approx 4 dozen)
1/2 c. palm shortening or coconut oil
1/3 c. sugar of choice (or 1/4 c. maple syrup)
2 Tbsp applesauce
3/4 c. molasses
3/4 c. coconut flour (+ a little more depending on final consistency)
1 1/2c. tapioca starch
1 Tbsp ginger
2 tsp cinnamon
1 tsp nutmeg (or mace for AIP)
1/2 tsp each: baking soda, salt, cloves
Mix ingredients wet to dry, adding in flour in stages (you may or may not need more coconut flour, so mix carefully). Should form a thick, slightly sticky dough. Wrap or cover and place in fridge for at least 30mins – this will make the dough much easier to work with.
Roll portions of the dough out between wax paper or silicone mats – thicker for soft cookies and thin for crispy – you know the drill! Use cookie cutters or make shapes for a building project! If desired, decorate with dried fruit, orange peel, chocolate chips (not AIP), coconut, etc.
Bake on a cookie sheet at 350F for 10-20mins (depending on size and desired “done-ness”). Cool and eat as is or add your favourite frosting!
